Audra's Famous Tomato Egg Sandwich

Okay, so maybe it is only famous to my daughter and husband :) But it is requested often in this household. This morning when I asked my husband if he wanted me to make him some breakfast, he asked for "Audra's Famous Tomato Egg sandwich". So I thought maybe I should share it with everyone else. It's a very simple recipe.

The history of this sandwich goes back to my childhood. On Sunday's our big meals were always after church at lunch time. Then it was back to church in the early evening so we didn't have an actual dinner on Sunday evening. When we would get home from the evening service, of course us kids would be hungry. So my mom would make us these sandwiches that were simple and easy. When I married my husband I began making them for him and the rest is history as they say. This is my recipe for Tomato Egg sandwich.

The amount of ingredients you use depend on how many sandwiches you are making. The first step is to scramble the eggs. I have one way I like my eggs scrambled and it is probably not the method most use. I  melt a tablespoon or so of butter in a skillet. Crack the eggs directly in to the skillet and let the whites cook just a little before you start to stir them. Salt and pepper to your liking.

Next step; toast two pieces of bread for each sandwich you are making. Spread mayonnaise on both pieces of toast. Place slices of tomato and a spoonful of scrambled eggs on one of the toast and cover with the second piece of toast. There you have it, the famous Tomato Egg Sandwich.
